About Kenichi Fujimoto

Kenichi Fujimoto is a master sushi chef with over 20 years of experience, celebrated for his passion and expertise. Born and raised in Ibaraki in Tokyo, Chef Fujimoto honed his skills in prestigious sushi restaurants, embracing traditional Edomae-style techniques and philosophies. Trained under renowned sushi masters Shinji Kanesaka and Takashi Saito, he has now brought his culinary artistry to Hong Kong with his first solo venture, where he skillfully blends traditional techniques with contemporary twists to create innovative sushi dishes, all while ensuring a daily arrival of top-quality ingredients from Japan.

Chef Fujimoto's love for sushi and Japanese culture is evident in every dish he prepares. With a deep appreciation for seasonality, Chef Fujimoto ensures an unforgettable dining experience that reflects his profound knowledge and commitment to the craft of sushi-making.

Design

The interior, designed by renowned Japanese designer Junzo Irikado under the direction and impression of Chef Kenichi Fujimoto, blends modern minimalism with Japanese cultural elements, drawing inspiration from his work on Ginza Sushi Kanesaka and Sushi Saito.

The restaurant features a calligraphic logo by famed calligrapher Nangaku Inoue, Fujimoto's uncle, with the word 'Fujimoto' at the entrance and 'Sushi' near the lavatory. The logo’s frame is adorned with gold leaf by a traditional craftsman introduced by Fujimoto's mother. His wife manages the seasonal flower arrangements that refresh weekly throughout the space.

Sushi Fujimoto's design retains classic Japanese aesthetics, with all materials, including the sushi counter crafted from a 300-year-old Cypress Tree from Nara Prefecture, imported from Japan. This combination of traditional elegance and thoughtful innovation creates a warm and inviting atmosphere, reflecting both family support and culinary passion, making it one of the most sought-after sushi dining experiences in Hong Kong.
